“Piquillo de Lodosa” peppers La Catedral de Navarra. These “piquillo” peppers, bright red, small, sweet, smooth and compact, belong to the “Piquillo de Lodosa” PDO. The Piquillo de Lodosa peppers La Catedral de Navarra have been flame-cooked in the traditional manner, to then be peeled by hand.
