“Piquillo de Lodosa” peppers La Catedral de Navarra. These “piquillo” peppers, bright red, small, sweet, smooth and compact, belong to the “Piquillo de Lodosa” PDO. The Piquillo de Lodosa peppers La Catedral de Navarra have been flame-cooked in the traditional manner, to then be peeled by hand. La Catedral de Navarra prepares its peppers dry in order not to lower the taste intensity of the “piquillo” fresh off the flame.
