Eggplant hummus. Hummus is a typical spread from the Middle East made with chickpeas, lemon juice, sesame paste and spices. In this version, we have mixed the chickpeas hummus with minced grilled eggplant to achieve a light texture and an intense and pleasant eggplant taste. Originally, the Middle East’s eggplant spread, similar to the one we use in this recipe mixed with the hummus, is called “baba ganoush” or “mutabal”.
